Our New Favorite Fall Treat

We love Fall and everything pumpkin! We have been tweaking a chocolate chip pumpkin muffins and it is our new favorite fall treat. These delicious muffins combine the flavors of pumpkin and warm spices with yummy chocolate chips. Whether enjoyed fresh out of the oven or as a cozy snack with a cup of cider or coffee, these muffins are sure to bring a touch of pumpkin joy to quiet (or loud) mornings at home.

Makes 15 - 20 Muffins
INGREDIENTS:
1¾ cups All-Purpose Flour
½ cup Brown Sugar
2 tsp Baking Powder
½ tsp Baking Soda
¼ tsp Salt
3 tsp Pumpkin Spice (1½ tsp cinnamon, ½ tsp nutmeg, ½ tsp ginger, ¼ tsp allspice,
¼ tsp cloves)
1 can (15 ounces) Pumpkin Puree
2 Large Eggs
¾ cup Maple Syrup or Honey
½ cup Avocado Oil
½ cup Milk
1 tsp Vanilla Extract
½ cup (or more!) Chocolate Chips
DIRECTIONS:
Preheat oven to 375°F & spray muffin tray with oil or line with muffin cups.
Mix flour, brown sugar, baking powder, baking soda, pumpkin spices & salt in a bowl.
In a separate bowl, mix pumpkin, eggs, oil, maple syrup/honey, milk, & vanilla.
Hand blend wet & dry mixes together. DON'T OVER MIX! Fold in chocolate chips.
Fill muffin cups with batter up to 2/3 full.
Bake for 15-20 minutes or until fully cooked.

This is a great recipe to make with kids
We prefer all organic & natural ingredients
Beat the egg whites separately for extra fluff
Use an ice cream scoop to pour the batter
Top with whipped cream
They taste best warmed up
The muffins keep well for 3 days
